Dinner last night...

Home grown acorn squash

Sorry I didn't take a photo of the squash before I "killed" it, but we picked it and cut it open to make sure it was good. I roasted it in foil (sprayed with olive oil) at 300 for about 40 minutes. Just seasoned with a little salt. That was all it needed. Delicious!

The salmon was poached in a bath of BBQ and mesquite seasoning for about 12 minutes. Yummy.

Those are...forgive me...instant potatoes, seasoned much like I do the Greek chicken: olive oil, garlic, onion, Greek oregano, lemon juice (yes, lemon juice in potatoes!) and some feta chunks. Also added some chicken bouillon, but just a hint. Didn't have any chicken broth handy, so I used skim milk. Casey loved them!

Oh, and I got that handy divided plastic plate at Target. They'll go in the dishwasher, too.
