One of Casey's favorite things from childhood: fried cornmeal "mush" with maple syrup.
Polenta
4 c. water
1 c. yellow corn meal
1 t. salt
- Grease a loaf pan with butter or non-stick cooking spray.
- Bring 3 cups of water to a boil.
- Combine remaining cup of water with corn meal and salt; slowly pour into boiling water, stirring constantly.
- Cook until thickened, stirring occasionally.
- Cover and turn down heat; simmer 5 minutes.
- Pour into prepared pan and cool in fridge until set.
- Slice into 1/4-inch pieces and fry in butter until warmed through.
- Serve with more butter and syrup, as you would pancakes.

I've been meaning to try polenta forever but just haven't for some reason. Sounds tasty!
Question: do you prefer natural maple syrup or artificial?
I made this for Casey, and he likes REAL maple syrup. (I actually liked the savory polenta better.)
As for syrup, I rarely eat pancakes or waffles, but when I do, I hate to tell you that I use the sugar-free crap. *feels shame*
But for baking, I always use the good stuff from Vermont!
