Casey asked me to make these again...they are really, really good!
Raisin Bran Molasses Muffins
1 c. wheat bran flakes
1 1/2 c. wheat flour
1/2 c. raisins
1 t. baking powder
1 t. baking soda
1/4 t. salt
1 c. milk
1/2 c. sour cream
1/2 c. molasses
1/2 c. chopped nuts
2 eggs
2 T. melted butter
Heat oven to 400˚.
Combine dry ingredients; then stir in nuts and raisins. In separate bowl, mix wet ingredients well; stir into dry ingredients. Do NOT over-mix the batter. Scoop into lined muffin tin.
Bake 16-17 minutes.
Makes 12 muffins.
