Chocolate-Raspberry Fudge for Stu
First, melt a package of chocolate chips in the microwave; stir well:
Then stir in a tablespoon or two of raspberry jam:
Mix in a can of cream cheese frosting & stir well:
At first, the frosting will be a little lumpy when you try to mix it with the chocolate...let it rest for a minute, then try to stir it again, and it should loosen up.
Blend well, and turn out into an 8 x 8 pan lined with greased foil. Refrigerate for at least an hour, then cut into bite-sized pieces.
This is a very easy recipe, and I'm sorry I didn't get more photos of the process, but I was in a real time crunch to get stuff done before we left to spend Christmas with relatives out-of-state.
Upon our return, Stu reported that the fudge was delicious.

I never thought to make a no cook fudge with frosting. That's a great idea!
Yeah, there are SO MANY combinations you can make just by using different chips and different frostings. If I'd had time to find it, I'd have used raspberry frosting instead of cream cheese frosting, but my local grocery store didn't have raspberry.
Here are some additional ideas:
> chocolate chips + pecan-caramel frosting
> butterscotch chips + vanilla frosting
> semi-sweet chocolate chips + fudge frosting + orange extract
> chocolate chips + peanut butter frosting + mini marshmallows
> chocolate chips + fudge frosting + Rice Krispies
> white chocolate chips + lemon frosting
One time I made "Tiramisu fudge" using white chocolate chips w/ instant coffee mixed with cream cheese frosting, butter cookie pieces, and mini chocolate chips pressed on top. It looked pretty! And tasted awesome. I have to make that again and take pictures...
