Chocolate Cake Mix Bars

I made this for the first time last summer, although I'd had the recipe card lying around for quite a while. The kids next door always descend upon my baked goods like locusts, and generally love everything I make. Due to the ridiculous chocolate content, these were particularly well-loved.

Double Chocolate Fantasy Bars

1 pkg. chocolate cake mix
1/4 c. vegetable oil
1 egg
1 c. chopped nuts*
1 can (14 oz.) sweetened condensed milk
1 pkg. (6 oz.) chocolate chips
1 t. vanilla

  1. Heat oven to 350˚.
  2. In large bowl, combine cake mix, oil and egg. Beat at medium speed until crumbly. Stir in nuts.
  3. Reserve 1 1/2 cups of crumbs in bowl in fridge. Press remaining crumbs into a 9 x 13" baking pan. Set aside.
  4. In saucepan, combine chips, sweetened condensed milk and vanilla; stir until chips melt.
  5. Pour melted mixture over pressed crumbs. Top with reserved crumbs.
  6. Bake 25 to 30 minutes or until sides are bubbly.
  7. Refrigerate leftovers! (or else they'll get really gooey and hard to cut)


* NOTE: you can use whatever type of nuts you prefer.
