Cheesey Sausage Stew
1 pkg. polish sausage (I use the Eckrich turkey kilbasa)
2 cans cheddar cheese soup
1 can broccoli cheese soup
3 soup cans of milk
2 or 3 medium potatoes, diced
2 carrots, sliced thin
1 stalk celery, minced
1/2 a small onion, minced
- Sautée onion and celery in frying pan until tender.
- In stock pot or Dutch oven, combine soups and milk; whisk together.
- Add other ingredients; mix well.
- Simmer over medium-low heat until potatoes are cooked through and soft.
- Serve with shredded cheese and salad croutons on top.
NOTES: Options include using water in place of milk, which will make the consistency thinner. Also, you can add fresh or frozen broccoli spears to the stew in place of other veggies. It's very versatile...check your freezer!
