Goldie's Baked Mostaccioli

2 pounds lean ground beef (or ground turkey)
1/2 of a large sweet onion, minced
1 jar of your favorite pasta sauce
1 can petite diced tomatoes
1 lb. fresh mushrooms, sliced
1 tablespoon minced garlic (from jar)
Spices: parsley flakes, oregano, marjoram, tarragon, sage, black pepper
2 tablespoons brown sugar
1 box (16 oz.) mostaccioli
1/4 cup freshly grated Romano cheese
1 cup (4 oz.) mozzarella cheese, shredded
  1. In large frying pan, sauté onion until lightly browned; remove from pan and set aside.
  2. Brown ground beef/turkey; drain grease. Remove from heat.
  3. Add onions back in; add pasta sauce, garlic, tomatoes, mushrooms, brown sugar and spices. Mix well.
  4. In large stockpot, bring salted water to a rolling boil. Add pasta; cook until al dente. Drain pasta very well and put back into pot.
  5. Mix meat sauce into pasta; stir well.
  6. Pour into large baking/casserole dish; top with Romano and mozzarella.
  7. Bake—covered—at 350˚ for 20 minutes. Remove lid/foil and bake 10 minutes more.

Chef Goldie--I look forward to trying it...and the story about Grandpa Dorton, he'd LOVE it! Gone but not forgotten.
