Peanut Butter Shortbread
1 can cream cheese frosting; divided
1 1/2 c. peanut butter
1/4 c. flour
1 egg
optional: 1 c. chopped peanuts
- Heat oven to 325.
- Grease and flour 15x10 jellyroll pan. (i.e. the thing you call your "large" cookie sheet)
- In a large bowl, combine 1 cup of frosting with other ingredients.
- Press into pan.
- Bake 15 to 20 minutes.
- Spread remaining frosting on warm cookies. Allow to cool, then cut into bars.
NOTE: At times, I have forgone the frosting on top--WHAT?!--and dipped the cut bars into melted chocolate chips. After all, you really can't go wrong with anything dipped in chocolate, right?

Flippin' easy is my middle name! I love peanut butter anything and I love the apparent ease of this recipe. I'm adding cream cheese frosting to my shopping list!
